Since the weather is nice, I am looking for recipes that are low fat and diet friendly for grilling.?

We can eat any white meats and veggies.

I have one great one
Cilantro lime chicken

4-6 chicken breasts thin and trimmed
3/4 cup olive oil
1/4 lime juice
1/4 teaspoon of cumin, cilantro, garlic, salt, and crushed red peppers.

Let marinate for at least 20 minutes… we marinated all day.
Grill chicken on each side for 10 minutes….
We also grilled asparagus and had mashed yams.

Very good.

    Kabobs are great, I make them often and everyone loves them.
    You will need:

    Bamboo skewers
    Chicken breast tenders, Stew meat or shrimp (whatever you like, or mixing them up is great too)
    Red and Green peppers (chopped in 1 inch pieces)
    Onion (chopped in 1 inch pieces)
    Cherry tomatoes
    Mushrooms
    Baby corn
    Worcestershire Sauce
    Garlic Powder
    Salt and Pepper to taste
    Olive oil

    Soak skewers in cold water so they do not burn on the grill
    Marinate meat in Worcestershire sauce for at least an hour
    Skewer everything together, rotating veggies and meat
    Brush with olive oil and sprinkle with garlic powder, salt and pepper and grill until meat is cooked thoroughly and veggies are a little soft, but still crisp and Enjoy!

    These go great with a garden salad on the side and grilled squash. To grill squash I brush with olive oil and sprinkle with salt and pepper.
