    Maple-Chipotle Barbecue Sauce

    TOTAL TIME: 25 MIN
    MAKES ABOUT 1 CUP
    This sweet and smoky barbecue sauce is the perfect gift for die-hard winter grillers. Refrigerate it for up to two weeks.
    INGREDIENTS
    3 large chipotle chiles in adobo, stems discarded
    1/4 cup ketchup
    1/4 cup pure maple syrup
    1 cup low-sodium chicken broth
    1/8 teaspoon ground allspice
    1 tablespoon vegetable oil
    1 medium onion, minced
    2 large garlic cloves, minced
    Salt and freshly ground pepper
    1 tablespoon fresh lemon juice

    DIRECTIONS
    1.In a blender, combine the chipotles with the ketchup, maple syrup, broth and allspice and puree until smooth.
    2.In a medium saucepan, heat the oil until shimmering. Add the onion and garlic and cook over moderately high heat until golden, 5 minutes. Add the chipotle puree. Season with salt and pepper. Cook over moderate heat until thickened, 15 minutes. Stir in the lemon juice. Transfer to a bowl and let cool.

    Carolina Mustard Sauce
    Ingredients
    3/4 cup yellow mustard
    3/4 cup red wine vinegar
    1/4 cup sugar
    1 ½ tablespoons butter
    2 teaspoons salt
    ½ teaspoon Worcestershire sauce
    1 1/4 teaspoons ground black pepper
    ½ teaspoon Tabasco sauce
    In a medium saucepan, combine ingredients, stirring to blend. Over low heat, simmer 30 minutes. Let stand at room temperature 1 hour before using.

    GREAT PORK LOIN

    Rib Rub (makes 6 cups)

    2 cups packed light brown sugar
    1 cup kosher salt
    three-fourths cup sugar
    one-half cup garlic seasoning
    one-fourth cup chili powder
    one-fourth cup lemon pepper
    one-fourth cup onion salt
    one-fourth cup celery salt
    2 tablespoons coarse ground black pepper
    2 tablespoons whole celery seeds
    1 teaspoon crushed cloves
    1 tablespoon cayenne
    one-half cup Mrs. Dash original blend
    one-fourth cup salt

    Mix these ingredients for a dry rub used on a variety of meats. Rub pork loin 1 hour before grilling. Grill loin on slow fire for about 2 hours until internal temperature is 170 degrees.

    What to make your own sauce – you need a tomato base. Try this base to get you started. This recipe will give you a good, thick tomato sauce that you can then add the flavour you want.

    INGREDIENTS:
    You can use 16 ounces tomato sauce ( i use squashed tomatos, with sugar and GM free tomatoe paste).
    1 small onion
    1/4 cup olive oil
    1/4 cup cider vinegar
    2 cloves garlic, minced
    2 tablespoons lemon juice
    1 tablespoon black pepper
    1 teaspoon smoked paprika
    1 teaspoon dry mustard
    1/2 teaspoon Tabasco
    1/2 teaspoon salt

    PREPARATION:
    Sauté onion and garlic in olive oil in a saucepan. Cook until transparent. Add lemon juice, salt and pepper, paprika, mustard, and Tabasco. Mix well. Simmer over medium heat for 5 minutes. Reduce heat to low and add tomato sauce and vinegar.

    Let simmer for an additional 15 minutes. From here you can add whatever flavour you want. Brown sugar, honey or molasses for a sweet sauce. Chilies and cayenne for a hot sauce. Really, whatever you like.

    This is excellant

    Barbecue Sauce
    1 cup apple cider vinegar
    1 cup ketchup
    3 tablespoons packed dark brown sugar
    1 tablespoon yellow mustard
    1 tablespoon molasses
    1 teaspoon salt
    1/2 teaspoon dry crushed red pepper
    In a bowl, combine all the ingredients and whisk well to dissolve the sugar heat over medium heat. Cool before using.
    Yield: about 2 cups.

    I love making homemade barbecue sauces and experimenting with various flavorings. I think this one is great for pork because of the apple flavoring.

    1/2 cup tomato paste
    1 cup ketchup
    1/4 cup apple juice
    1/4 cup apple cider vinegar
    1/4 cup worcestershire sauce
    1/3 cup light brown sugar
    1 teaspoon garlic powder
    1 teaspoon salt
    1 teaspoon black pepper
    1/2 teaspoon crushed red pepper flakes

    1. Place all ingredients into a saucepan, stir and bring to a boil.
    2. Reduce heat and simmer for 20 to 30 minutes, stirring often to avoid burning.
    3. Remove from heat, let cool for 10-15 minutes and baste pork.

    The easiest barbecue sauce is 1 part ketchup to 1 part coke. ie. 2cups ketchup and 2 cups coke mix well. try it its good.
