My husband is a chef and his favorite way to do mahi mahi is in a coconut lime marinade. Just combine coconut milk and like juice (about half as much lime juice as milk) some garlic (not too much) salt and pepper and let the fish marinate for 30 minutes or so. Make sure you brush the fish with a bit of olive oil before you put in on the grill so it doesn’t stick! Hope you enjoy!

mahi has such a good flavor that you really do not want to ruin the fish. brush it with some olive oil and put it on the grill. you could make a mango salsa very easily. mango, jalapenos, onions, S&P,and lemon or lime. but concetrate on your sides. what do you have or what is fresh.

My suggestion would be , is to use a good sheet of alum. foil ,place slabs of butter & slices of (thick slices about 1/4-3/8")onion on the bottom. Then place your fillets on top of the butter & onions.Spices to use are ,fresh thyme, rosemary, garlic pepper & seasoned salt (old bay if you’d like). Then drizzle some EVOO (exra virgin olive oil) over the top.Next ,cut (slice) lemmons same size as onions & place on top of fish. Then, seal foil & grill on med-high heat for 30-45min. or until fish is fork tender(where the meat flakes off)..!!!!!!!!!!!!!!!! Enjoy & i hope that helps!!!

If you like spice marinate them for about an hour with raspberry chipolte dressing, place on grill and turn only once using the rest of the raspberry chipolte sauce
