Favorite Marinades For Red Meat and Chicken

I use the soy sauce, honey, wine/gin combination. Marinate overnight. I would like to know how you would marinate your meats. Do you baste your meats during cooking? I’ve seen people brushing honey and ‘splashing’ beer or Sprite over the meats while cooking. I’m looking for your own winning recipes and not the ones on the net. Care to share?

    I use italian dressing for beef or chicken. Let it marinate for 20 minutes to an hour, then toss it on the grill or into a hot pan.

    For steaks I use a shot of whiskey and brown sugar

    Marinate meat (overnight is best) with vinegar, plenty of red chillis (grinded in the blender with a little bit of water) and salt .While cooking brush meat with olive oil.Serve with pasta/potato salad , garlic sauce and ketchup.

    For up to 1 1/2 lb ± of steak – I like:
    1 cup of Italian (or vinegar and oil) Dressing (prepared kind – cheap, cheaper or good stuff!)
    To that I add:
    1 Table spoon Soy Sauce
    1/2 can of beer (then I quick -drink the rest!)
    or 1/2 cup of (left-over) red (or any) wine.
    1/2 tsp sugar (this jump starts the marinade working)

    Add to the steak in a plastic bag, seal and shake well to blend then refrigerate for 2 hours or more, turning it occasionally or when you go for another beer.

    This marinade also works quite well with Chicken or Pork!

    As does just the dressing(s) without anything added, It is a fail safe marinade all by itself – Especially when or while you are NEW to BBQ’n.

    Haven’t tried it yet with ‘possum, coon, crow or old goat – - snicker, snicker !

    Note: Discard the marinade as soon as the marinating is done, don’t even use it for basting – Trash It !
    If you want to baste – use fresh.

    Regular italian dressing is the easiest marinade…. and it’s pretty dang good.

    Good Seasons Italian salad dressing, a tiny bit of soy sauce, salt and pepper, and 1 quarter of a cup of cola… it will REALLY give your meat an incredible flavor…

    You can always add some meat tenderizer as well to make it REALLY tender…

    In a blender use 1 can of beer or 1/2 for less marinade…
    Add your favorite seasoning salts like Sazon or Adobo with fresh garlic or garlic powder. Blend and pour over meat . You can marinate overnight and refrigerate or marinate same day and let stand for a few hours. You can also add your own barbarce sauce or honey to this blend….For a glaze use brown or white sugar by warming sugar with water and adding to blend Add Pineapples for a garnish.

    Red man’s BBQ sauce or any good BBQ sauce, A-1 sauce, garlic, onion, and green peppers, and root beer, (root beer will tenderize the meat also great for ribs

    I don’t know what you like in taste. I love it this way, crushed garlic, crushed ginger, soy sauce, little sugar, little vinegar, crushed chilli if you like it spicy,and little salt to taste, marinate overnight and toss over once before in use

    For chicken,

    I use low fat or regular italian dressing. Marinate about 12 hour and grill. MMMgood.
    Other dressings are good too, for red meat
    use vinegar & oil, basil, garlic, and a little sugar. good too.

    1 can Crushed pineapple, 2 tbl. soy sauce, 1/4 cup brown sugar and 1/2 cup of orange juice, 1 tbl. olive oil, 1 tsp. cinnamon and ginger. Place in heavy gallon size zip baggie with 1 lb. chicken and marinate overnight. As you are cooking the meat, you can brush the liquid from the bag over top every five minutes, or as you turn the meat or chicken over. This is also good on fish!

    For Chicken, I use the following.

    3/4 cup balsamic vinegar
    1/2 cup olive oil
    2 teaspoons brown sugar
    1/4 cup finely minced sweet onion
    cracked black pepper
    Refridgerate 1-4 hours.

    In regard to one of the answers, be very careful about using the marinade that the meat was marinated in to baste while grilling. That is not considered safe. I would trust that the meat is left in the refrigerator while marinating.

    I would normally use my mom’s spicy marinate, its simple to prepare and act as a tenderiser, not to mention delicious as well!

    To prepare marinate:
    (for 1kg red meat/chicken)

    5 bulbs red shallots
    1 bulb garlic
    fresh chilli peppers (pitted & depend on how hot u want)
    Slices of ginger
    Slices of lemon grass
    Salt & sugar to taste
    1 teaspoon lemon juice
    1 teaspoon black soya sauce

    Blend all of the above in an electric blender and simply use to marinate your meat/chicken for half an hour before BBQ.

    Mine is very simple. I mix two bottles of Kraft spicy honey bbq sauce with one bottle of steak sauce. House brand is good for this. I first boil what ever meat I’m using in lightly salted water mixed with a little of the sauce that was mixed for five min. add more of the sauce leaving some to baste. Place on the grill and baste as needed. Always have a spray bottle filled with water on hand. Every time you baste spray the meat and close the lid. This keeps it very moist and tender.

    For me, I use soy sauce, pepper, garlic, flavoring and sprite. put in the refrigerator and leave it overnight. During cooking, I use again the marinated sauce (the one I use to marinate the meat) to baste the meat during cooking!

    I like two mix worceshire sauce and lemon pepper seasoning with some musturd and bbq sauce……marinate over night on well tenderized meat…yummy…oh and lay a few lemon halves in the marinade pan with the meat…

    I marinate my chicken the day before…. with a mix of Honey, paprika powder, a bit of pepper, crushed garlics and mustard… (mustard helps make any meat tender and juicier).
    I try not to use soy because it burns the chicken faster…

    Why don’t you try very simple things? Marinate your chicken with turmeric powder (2tsf/kg) and yogurt (10tsf/kg). Keep it for two hours and it is ready for bbq
